Lemon and basil courgette

Great served hot or cold!

Ingredients

½tbsp Olive Oil
½tbsp Coconut Oil
½tbsp Lemon Juice
Black pepper to taste
Basil small handful, torn

Method

  1. Heat a frying pan and add the oil
  2. Place the courgettes into the pan so they are only in one layer. Cook for a couple of minutes on each side
  3. Remove from the pan, add the lemon juice, black pepper and torn basil and mix
